Galentine’s Day Savory Snacks

As Leslie Knope would say, Galentine’s Day is the best day of the year! Today we celebrate our gals in a fun and colorful way. So whether you’re hosting dinner for all your girlfriends or decide to kick it back and order a heart-shaped pizza, I wish you a fun-tastic Galentine’s Day!

This year, my friend is hosting a Galentine’s Day brunch and we’re all bringing snacks! I decided to make a simple and savory Valentine’s Day Snack Mix, as well as Red Velvet Brownies to satisfy my sweet tooth. If you’re throwing a Galentine’s Day party then you’ll want to make these recipes:

Valentine’s Day Snack Mix

This recipe will make a good batch for about 4-6 people. If you’ve got more gals in your group, simply increase the ingredient amount. It’s okay if you have to work in batches! Mex should be 2.

Ingredients needed

2 bags of microwaveable popcorn

2 teaspoons of salt

½ a cup of Kelapo Ghee (melted)

2 cups of Chex cereal (or your preferred cereal. Example: Cheerios)

2 cups of mini pretzels

1 cup of almonds

Sprinkles (Pink, red or white)

½ cup of Kelapo Coconut Oil (melted)

1 cup of white chocolate chips

1 cup of pink candy melts

M&M’s (Valentine’s Day themed)

First, you want to make the popcorn and then place it in a bowl. Pour the Kelapo Ghee and sprinkle the salt on the popcorn then toss to make sure popcorn is coated. In a large roasting pan, add the cereal, popcorn, almonds, and pretzels. Toss the ingredients so they’re evenly distributed. Next, in two separate microwave-safe bowls add the chocolates and 1-2 tablespoons of the Kelapo Coconut Oil to each both. Pop each bowl into the microwave for 1-2 minutes for 20-second intervals. After each interval stir the coconut oil and chocolate to make sure they are melting and not burning. The coconut oil will give the chocolate a sweet taste. Once the chocolate melts, drizzle both over the snacks. Make sure to stir it all together. For this recipe, I lightly coat the snacks but you can decide to completely coat the mix. Add the sprinkles and Valentine’s Day-themed M&M’s on top while the chocolate is still warm. Let everything cool for about 30 minutes and enjoy!

Red Velvet Brownies

Ingredients needed:

1 (4 oz) bittersweet chocolate baking bar (chopped)

¾ cup of Kelapo Ghee

2 cups of coconut sugar

4 large eggs

1 ½ cups of flour

1 ½ teaspoon of baking powder

1 teaspoon of vanilla extract

Red food coloring

Kelapo Ghee Non-Stick Cooking Spray

Frosting

1 (8oz) cream cheese package

3 tablespoons of Kelapo Ghee

1 ½ cups of powdered sugar

1 teaspoon of vanilla extract

Begin by preheating the oven to 350 degrees. Next, line a 9×9 inch pan with aluminum foil allowing it to hang over the sides and lightly grease with Kelapo Ghee Spray. Add the chocolate and Kelapo Ghee to a microwave-safe bowl for intervals of 30 seconds. 1-2 minutes should be enough to melt the chocolate while making sure not to burn it. In a separate bowl, add the coconut sugar while whisking in the eggs one at a time. For these steps, I used a hand mixer. Into the same bowl, add the flour, red food coloring, baking powder, and vanilla extract. Blend with the hand mixer until thoroughly mixed. Lastly, pour the batter into the pan and pop in the oven for 40-45 minutes. To verify if the brownie is ready, simply insert a toothpick to make sure it comes out clean.

With a hand mixer, beat the cream cheese and Kelapo Ghee until a smooth consistency. Add the powdered sugar and vanilla to the bowl and continue to beat until a creamy consistency. Immediately frost the cooled down brownies and enjoy!
