Gameday Snack Mix

Since I’m basically a football widow this time of year, I’m usually doing my own thing on Sundays while the Hubs gets his fill of man-tackle-ing, Fantasy Football points, and funny beer commercials.  I generally try to stay far away from the TV room, unless A.) Tom Brady is on (I’m sorry but he is just so pretty!), B.) John Madden is talking about turducken, or C.) There are good munchies.

This totally addictive snack mix will satisfy a sofa full of Cheeseheads, Bills Backers, Hogettes, or Who Dat Nation (whatever you say, Wikipedia) and won’t take more than a commercial break to whip together. Just don’t be surprised if it’s gone by third down, whatever the heck that means.

Gameday Snack Mix Recipe

Recipe Ingredients

2 cups unsalted mixed nuts (I recommend pecans, cashews, and peanuts)

1 Tbsp Kelapo coconut oil, melted

2 tsp smoked paprika

1 tsp each garlic powder and onion powder

3/4 tsp salt

1 bag (3.5 oz) microwave popcorn

2 cups each baked cheese snacks, pretzel snaps and wasabi peas

Ingredients

Heat oven to 350°F. Line a rimmed baking sheet with foil.

Toss nuts with coconut oil, spread on sheet. Mix smoked paprika, garlic powder, onion powder and salt in small bowl. Sprinkle 1 tsp over nuts.

Bake 8 minutes until nuts are toasted and fragrant.

Meanwhile microwave popcorn as package directs. Immediately pour into a large bowl, add remaining paprika mixture and toss to coat. Stir in remaining ingredients. Enjoy! Just don’t ask me who won the game.
