Gluten Free Avocado Fries
The one thing I can’t stay away from during the Big Game is junk food. It’s really the one time I allow myself to nibble and snack on EVERYTHING. And my friends know Pinterest – so there’s all kinds of good stuff hanging around in the kitchen. So this year, I thought I could at least attempt to make something delicious that wasn’t so terrible for my diet.
This recipe is simple, easy, and most importantly awesomely good. If you love avocados, that is. I love this “superfood” because it’s filling, packed with fiber, vitamin K and B6. It only took me a few minutes to prepare and cook one whole avocado, which made about 8 ‘fries.’ I also suggest using ones that aren’t quite ripe, they will become ‘melted’ when heated.
Good thing these are quick and easy to make, because they will be gone in a flash!
Ingredients:
1-2 Avocados
1 cup water
1/2 cup gluten free bread crumbs
1 teaspoon spicy pepper mix (I used Chef Paul Prudhomme’s Magic Seasoning Blends Six Spice)
1/4 cup mozzarella
1-2 tablespoons Kelapo Coconut Oil or Non-Stick Spray
Directions:
Cut avocado in half, length ways. Twist open and remove pit. Cut each half three times creating four “fries”. Use spoon along edge of skin to pop out avocado.
Mix gluten free bread crumbs, spice mix, and cheese in bowl. Dunk each fry into water then immediately into mixture.
Heat about a teaspoon of coconut oil in frying pan over medium high heat. Place avocado slices in oil and fry each side for about 2-4 minutes, until golden brown.
Remove and enjoy!
