Hanukkah Potato Pancakes
Potato pancakes with applesauce and sour cream
My family doesn’t celebrate Hanukkah, but I LOVE to eat Fried Potato Pancakes (Latkes in Yiddish) with applesauce around the holidays. Coconut oil makes these about twenty times better than the old standby, canola oil, and your house will smell nicer, too!
Ingredients:
5 potatoes
2 onions
3 eggs, beaten
1 tsp. salt
1/4 tsp. pepper
½ cup all-purpose flour
Kelapo Coconut oil for frying
Directions:
Peel potatoes and place in a food processor with the onions. Pulse until just smooth, and drain well. Pour potato mixture into a large bowl. Add eggs, salt, pepper, and enough flour so that the mixture holds together. Heat one inch of coconut oil over medium-high heat in a large, deep frying pan.
Carefully drop 1/4 cup of the potato mixture into the hot oil, flattening the pancake slightly so the center will cook. Fry for several minutes on each side until golden brown and cooked through, then drain on paper towels and serve hot with applesauce.
Makes approximately 20 pancakes.
