Gingerbread Muffins!

Now that we are a few days away from Christmas, I’m starting to plan out what desserts that I’ll be making for both Christmas Eve and Day. I make it a tradition to spend Christmas Eve with friends and Christmas Day with family, so there is always tons of food and sweets involved in these joyful celebrations.

During my baking and sweet creation, I use coconut oil as my go-to ingredient, which I’m absolutely obsessed with! Coconut oil can be used as a replacement for butter or oil in any recipe. You simply swap out the ingredients in a 1:1 ratio, so there is never any confusion. This healthy fat makes cookies and cakes turn out so delicious and no more dryness!

Here’s some of my favorite desserts that I’ll be making this Holiday season:

Peppermint Bark – This chocolate treat is the easiest dessert that I make and it ALWAYS is a hit with everyone in the room! Adding coconut oil to both dark and white chocolate really helps the melting process and gives an added smoothness to the bark itself. With this recipe, feel free to add an entire layer of white chocolate over top – yum!

Gingerbread Muffins – Remember those times of making gingerbread cookies a child? I loved the process of cutting out different shapes, but the entire process can get pretty long. With these gingerbread muffins, you’ll have the distinct gingerbread taste without the hassle! You can even put the batter into mini muffin pans for bite-sized portions. Be sure to spray your muffin tin or liners with Kelapo Coconut Oil Cooking Spray! These are especially great for Christmas morning breakfast.

Monkey Bread – Monkey bread is super simple to make and reminds me of a giant cinnamon roll! Using coconut oil in this baked good compliments the cinnamon so perfectly – I promise that you won’t be disappointed! This recipe is also great for kids since it’s fun to pull apart your own individual pieces.

Peanut Butter Blossoms – These cookies have always been a tradition to make during the Holidays. Peanut butter and chocolate is one combination that you can’t go wrong with! Feel free to change up the middle with any type of chocolate kisses – there are so many varieties these days.

Chocolate Dipped Macaroons – In my opinion, you can’t go wrong with making macaroons for entertaining. This is another easy recipe that takes just about no time to make and also makes a good amount!

When baking, don’t forget about your pups! These homemade dog treats are the perfect treat to give your furry friends for a Holiday treat.
