Leftover Spicy Chicken Salad
Spicy Chicken Salad with Blue Cheese Crumbles
I love nothing more than using leftovers in a new, exciting way! Especially when it transforms into a much healthier lunch the next day. Here is my favorite use for leftover buffalo chicken (if my fiancé and his friends don’t gobble it all up while watching sports!)
Buffalo Chicken Salad
Ingredients:
Mixed green lettuces. (I prefer ½ butter lettuce and ½ red or green leaf lettuce)
2 Carrots, chopped
1/3 c celery, chopped
Coconut Oil cooked Buffalo Chicken, cut into small strips.
¼ cup thawed frozen corn
Buttermilk ranch dressing, to taste
Blue cheese crumbles
Black Pepper
Optional: Crumbled tortilla chips, for crunch
Mix in a bowl and enjoy. How easy was that?!
