Margaux J. Rathbun’s Coconut Oil Zucchini Chips
Zucchini Chips
In the mood for a healthy snack? Trying to overcome your junk food cravings? Give these delicious zucchini chips a try! They are a much better alternative to conventional, processed snacks that are sold at grocery stores. Plus they are loaded with beneficial nutrients! According to nutrition-and-you.com, “Zucchini is one of the very low calorie vegetables; provide only 17 calories per 100 g. It contains no saturated fats or cholesterol. Its peel is good source of dietary fiber that helps reduce constipation and offers some protection against colon cancers.”
Here’s what you will need to get started:
3 organic zucchini, sliced about ¼ in thick
Sliced Zucchini
2 Tbsp. Kelapo Coconut Oil
Sea salt and pepper, to taste
A dash of curry powder
Toss sliced zucchini in oil and season liberally with salt and pepper. Bake at 400 degrees Fahrenheit until golden brown. Place browned chips on a rack to cool, about 10 minutes. Sprinkle with curry powder and enjoy!
These little chips are a treat that your whole family will love munching on! Looking for other great alternatives to junk food? Try Kelapo’s Apple Chips and Sweet Potato Chips.
