National Salad Month

May is here and we’re welcoming National Salad Month with open arms! There are all kinds of salads not just ones that have leafy greens. The idea behind this concept is to create better-eating habits. I hope these recipes inspire you because food has amazing powers! At least that’s what my niece says.

Chicken Avocado Caprese Salad

This recipe is perfect if you’re craving something light and savory. I usually make this with breaded chicken but it tastes great as is.

Ingredients needed:

4 chicken thigh fillets (skinless and boneless)

5 cups of romaine lettuce leaves (washed)

1 avocado

1 cup of cherry tomatoes (sliced)

½ cup of mini mozzarella balls

¼ cup of basil leaves (thinly sliced)

1 to 2 tablespoons of Kelapo Ghee

Salt (to taste)

Pepper (to taste)

Dressing

¼ cup of balsamic vinegar

2 tablespoons of olive oil

2 teaspoons of brown sugar

1 teaspoon of minced garlic

1 teaspoon of dried basil

1 teaspoon of salt

Place all your chicken thighs in a large bowl and in a separate one whisk the dressing ingredients together. You’ll want to use 4 tablespoons of that dressing to marinade the chicken. Stir it and make sure all chicken thighs are fully coated. Let marinade for about 30 to 35 minutes minutes. Next, drop the tablespoons of Kelapo Ghee on a skillet over medium-high heat. Grill each chicken thigh on each side until golden and cooked through. Once the chicken has finished cooking, place on a separate plate and let cool for 10 minutes. While the chicken is cooling, add the lettuce, tomatoes, sliced avocado, and mozzarella balls into a salad bowl and toss. Then slice chicken thighs into strips and place on top. Drizzle the balsamic dressing all over and toss the salad once more before serving.

Roasted Cauliflower Salad

Ingredients needed:

1 head of cauliflower (cut into florets)

3 large carrots

1 tablespoon of ground cumin

2 teaspoons of paprika

Kosher salt (to taste)

Black pepper (to taste)

2 tablespoons of Kelapo Ghee (melted)

¼ red onion (sliced)

1 cup of fresh parsley (chopped)

Kelapo Ghee Non-Stick Cooking Spray

Dressing

¼ cup of tahini

1 garlic clove (minced)

2 tablespoons of lemon juice

¼ cup of water

¼ cup of olive oil

Kosher salt (to taste)

Pepper (to taste)

Start by preheating your oven to 425 degrees. Next, cut up your carrots into 1 or ½ inch pieces. Place both the cauliflower florets and carrots in a large bowl. Top with cumin, paprika, kosher salt, and black pepper, and add the melted ghee to seal all ingredients together. Toss the carrots and florets until everything is well-coated. Grease a baking sheet with Kelapo Ghee Spray and spread the vegetables in a single layer over the sheet. Pop the vegetables in the oven to roast for about 20 to 25 minutes, or until the carrots become tender. While the vegetables are baking, grab a medium sized bowl and add all the dressing ingredients together. Stir together until everything is well-combined. In a salad bowl, add the chopped parsley, sliced red onion, and cooked vegetables. Toss everything together before drizzling the dressing on top. Last but not least, enjoy~

BLT Pasta Salad

This pasta can also go very well with some barbecue chicken!

Ingredients needed:

2 ½ cups of bowtie pasta

6 cups of romaine lettuce (torn or chopped)

1 medium tomato (diced)

5-6 bacon strips

½ cup of ranch dressing

1 tablespoon of barbecue sauce

¼ teaspoon of pepper

Start by cooking the pasta based on the instructions on the box. Once cooked, drain and rinse until come cold water. The original recipe calls for 4 strips of bacon but I always say the more bacon, the better. I recommend using about 5 to 6 strip of bacon and cooking them on a skillet. Cook the bacon until it is crispy and then let them cool on a plate before chopping it up. In a large salad bowl, add the lettuce, tomatoes, chopped bacon, and dried pasta. Drizzle the ranch and barbecue sauce over the top and toss until the salad is well-coated in the dressing. Season with some pepper and serve!
