Oh, For the Love of Pecan!

We’re welcoming April with open arms because it means spring is making an appearance. There’s also so much going on in the month of April! Besides being Autism Awareness Month, it is also National Pecan Month. As I always say, no better way to celebrate something than with a delicious recipe! I found something super fun and easy on Tasty to make for desserts or snacks any time of the week.

Pecan Lace Cups

A decadent pecan recipe for the whole family to enjoy. Use it to make something savory or sweet! The idea is the same behind the waffle cups that you normally enjoy with ice cream. With this recipe, unlike the waffle cups, you can enjoy it in more ways than 1! I’ve substituted butter with Kelapo Ghee and used coconut oil to melt the chocolate in the microwave. For this recipe, you can even create your own fillings, but I’ll share the 3 main ones I found below.

Ingredients needed:

1 cup of Kelapo Ghee

¼ cup of brown sugar

¼ cup of corn syrup

¼ cup of flour

¾ cup of finely chopped pecans

½ cup of semi-sweet chocolate (chopped)

1 tablespoon of Kelapo Coconut Oil

Start by preheating your oven to 350 degrees. Then, in a medium-sized saucepan add in the Kelapo Ghee, brown sugar and corn syrup. You’ll want to set the heat to medium and bring everything to a boil. As you’re stirring and it starts to boil, remove from heat. Make sure everything has melted and blended before adding in the flour and pecans. Next, stir everything together and let it cool for about 10 minutes. On a cookie baking sheet top it with parchment paper. Using a teaspoon measure scoop 5 balls about 5 inches apart onto the baking sheet. Make sure they’re spread out enough because they will expand. Place them in the oven for about 6 to 7 minutes until the edges are a golden color. Next, take them out of the oven, but let them rest for about 1 minute before peeling them off of the baking sheet. Be careful that you take them off before they harden. Take each “cookie” and place them over the backside of a muffin tin so they can take on that cup shape. This will usually take about one minute or two. In the bowl with all the chopped chocolate add in the coconut oil and place in the microwave for 1 minute in 20-second intervals. Stir between each interval. Also, when you add in coconut oil make sure it is melted not solidified. Once the chocolate has completed melted, dip in the pecan lace cups and let the chocolate cool and harden. Now you’re ready for the filling!

Below you’ll find different recipes so pick the one you’re craving or create your own!

Berries and Cream

3 cups of whipped cream

4 cups of strawberries (halved)

6 cups of raspberry

½ cup of blueberry

Add the whipped cream in the middle of the pecan lace cups and add the fruits on top

Hot Fudge Sundae

1 pt of vanilla ice cream

1 cup of mixed nuts (chopped)

Chocolate syrup

Take one pecan lace cup and add one scoop of vanilla ice cream. Finish by topping off with chocolate syrup and chopped nuts.

Chocolate Banana

1 package of instant banana pudding (prepared)

4 bananas (sliced)

1 cup of mixed nuts (chopped)

¼ cup of melted chocolate (previously prepared)

Add about 2 tablespoons of banana pudding to each pecan lace cup and top with two to three slices of banana. Drizzle the pre-made chocolate on top and then add the chopped nuts.

All that’s left to do is enjoy!
