Quick and Easy Peppermint Bark

Peppermint bark is one of my all-time favorite holiday treats to make for family, friends, and co-workers. It’s now a tradition for me to make since each batch has always been a hit! I love making this recipe because it’s done in no time and fun to put together. Here’s what you’ll need:

Peppermint Bark

Ingredients

2 bags of milk or dark melting chocolate (I always use Wilton’s candy melts, which can be found at a local craft store).

1 bag of white melting chocolate

Peppermint extract

2 to 3 candy canes

2 tablespoons Kelapo Coconut Oil

Directions

Place water in a sauce pan and bring to a boil.

In a separate bowl, add milk or dark chocolate melts and place on top of the boiling water. Add in 1 tablespoon of coconut oil and stir together frequently until all chocolate is melted. The coconut oil will give the chocolate a smooth consistency and prevent clumping.

Next, add in the peppermint extract. Personally, I start off by adding in 5 drops and increase to taste. I like my bark to have a strong, peppermint flavor.

With a spatula, spread the chocolate mixture onto a cooking sheet lined with parchment paper and let it cool.

Place the white chocolate melts in a new bowl and put on top of the boiling water. Add in 1 tablespoon of coconut oil and stir together frequently until all chocolate is melted.

Once the white chocolate is melted, take a fork or spoon and drizzle the white chocolate over the milk/dark to create a splatter effect.

To crush the candy canes, I put them in a Ziploc bag and gently pound them with a hammer.

Sprinkle the crushed candy canes over the chocolate mixture and refrigerate for about an hour.

Once the peppermint bark is solid, break apart into pieces and enjoy!
