Quick and Fun Snacks

When prepping for my niece and nephew’s lunches I love to create different fun snacks that their mom and dad don’t normally do! It’s the perfect way to brighten up their day during their snack times. Kids, just like adults, can have bad days so these snacks are the perfect way to change that all around. Plus, these cute snacks have helped them make friends!

Cereal Yogurt Barks

I’ll admit, I loved these! All you really need is their favorite cereal. Using 2 to 3 different cereals makes it more fun, especially if the yogurt is plain. If you’re going to use plain yogurt, make sure to add coconut oil or honey.

Ingredients needed:

1 cup of Fruity Pebbles cereal

1 cup of Fruit Loops cereal

¼ cup of Kelapo Coconut Oil (melted)

2 cups of Greek yogurt

In a bowl, add the yogurt and melted Kelapo Coconut Oil. Stir it together. Add parchment paper on 9×9 inch pan and using a non-stick spatula, spread the yogurt until it’s about 3/8 inch thick. If you need to add a bit more yogurt, feel free! Sprinkle your cereal all over the top of the yogurt and then pop it in the freezer for about 4 to 6 hours. Once the yogurt has hardened, peel off the parchment paper and break it into pieces. You can use a knife or your hands, either will do.

Berry Oatmeal Cups

These can be really fun if you use icing or berries to make faces on them! My family loved the taste.

Ingredients needed:

1 cup of almond milk

½ cup of maple syrup

½ cup of Kelapo Coconut Oil

2 eggs

1 teaspoon of vanilla extract

1 ½ cups of quick-cook oats

1 cup of granola

1 teaspoon of baking powder

1 teaspoon of cinnamon

Kelapo Coconut Oil Non-Stick Spray

1 cup of mixed berries

Begin by preheating the oven to 350 degrees. Then in a large bowl, add the almond milk, eggs, and vanilla extract and whisk it all together. After you’ve whisked the wet ingredients together, add the oats, granola, baking powder, and cinnamon. Whisk all the ingredients until they’re thoroughly combined. Next grease a muffin tin pan with the Kelapo Coconut Oil Spray and scoop 1 tablespoon of oatmeal mix into each muffin hole. Decorate the tops with berries. This is where I got creative and made faces out of them! Use the blueberries for eyes and mouth, then cut the strawberries into long thin shapes for whiskers. Viola, you now have a cat face! The idea is to get creative. Once you’re done, pop them in the oven for about 25 to 27 minutes and enjoy! You can store these in the fridge for a maximum of two days.
