Quick Weeknight Dinner: Turkey Kielbasa

Turkey Kielbasa with Cauliflower Mash and Asian Snap Peas

We all have busy lives, especially during the weekdays. Whether you’re going to work or taking the kids to school and soccer practices, time can get pretty crunched. Instead of heading to the drive thru for unhealthy and fatty foods, try one of our delicious recipes. A favorite from a co-worker that we recently discovered is Turkey Kielbasa with mashed cauliflower and snap peas! Talk about tasty and getting a double dose of veggies in, without the kids realizing it, yum!

Turkey Kielbasa:


1 Smoked Turkey Kielbasa
1 tablespoon Kelapo Coconut Oil
1.5 teaspoons favorite meat rub (I used Lemon Pepper)

Directions: add Kelapo coconut oil to a pan and heat to medium. Cut kielbasa into 1/2 inch chunks and add to hot oil. Toss in seasoning and cook (stirring occasionally) until outside browns about 8 minutes.

Cauliflower Mash:

1 medium head of cauliflower
1 tablespoon cream cheese
1/2 tsp sea salt
Pinch black pepper
1/2 tsp fresh minced garlic
1/4 cup parmesan
2 tbsp low fat mozzarella

Directions:

Add Cauliflower florets to a pot of boiling water. Boil for 8-10 minutes. Drain water and pat Cauliflower dry. Add all ingredients to a food processor and process until smooth

Asian Snap Peas

1 lb snap peas
2 tbsp Kelapo coconut oil
1/4 cup soy sauce
1 tsp Garlic powder
1 tsp Paprika

Heat Kelapo coconut oil in a wok or pan. Toss rinsed snap peas into the hot oil and add soy sauce and seasoning. Sautee for 8-10 minutes.

This simple meal will have dinner on the table in less than 30 minutes and will be much healthier than eating out. Share your favorite weeknight meals in the comments section!
