Honey and Mustard Chicken Thighs and Spring Veggies

Baked Chicken Thighs

After a day of eating candy, my family and I are due for a healthy home-cooked meal. This chicken and vegetable recipe is my favorite Spring dinner recipe. It’s very easy to make and you will probably have all the ingredients in your kitchen already! My favorite part is the crispness of the skin, thanks to the savory, rich, Kelapo ghee.  Ingredients: 1 tablespoon honey 1 tablespoon wholegrain mustard 2 garlic cloves, crushed 1 lemon, zested and juiced 4 chicken thighs, skin on 300g new potato, unpeeled and smaller left whole and bigger halved 1 tablespoon Kelapo ghee 100g spinach 100g frozen peas Instructions: Heat the oven to 350 degrees. Using a […]

Tuscan Salmon

I love Tuscan Chicken but my new favorite at the moment is Tuscan Salmon. That creamy delicious sauce along with the beautifully tender salmon filets creates such an easy dish. Using Kelapo ghee gives the sauce the nice kick of flavor than traditional butter! You can serve your salmon along with your favorite veggie. I always like to throw some seasoned asparagus in the oven while I’m cooking the Salmon. Ingredients: 3 Salmon Fillets Olive Oil (2 teaspoons) Kelapo Ghee (2 tablespoons) Finely Diced Garlic (5 cloves) 1 Small Onion *diced Vegetable Broth (⅓ cup) Fresh Grape Tomatoes (5 oz) Heavy Cream (1 ¾ cup) Salt and Pepper *to taste Baby Spinach (3 cups) Grated Parmesan (½ […]

Coconut Curry Chicken

Over quarantine I was obsessed with curry. What’s good about this recipe is you can swap out the protein to whatever you’d like. You can make all sorts of dishes; fish, shrimp, or whatever is in your fridge! The magic is in the curry itself; creamy, delicious, and flavorful. The coconut milk along with the Kelapo coconut oil is a wonderful pair that makes this dish addicting. I’ve already made this dish three times this month!   Ingredients: Onion *diced Red Bell Pepper *diced Chopped Garlic (3 cloves) Kelapo Coconut Oil™ (2 tablespoons) Boneless skinless chicken *cut into cubes (3 breasts) Curry Powder (2 tablespoons) Ginger Powder (1 teaspoon) Full-Fat Coconut Milk (13.5 oz) Juiced Lime (1 lime) Salt and […]
