Perfect Latkes

I have to say, I was nervous the first time I ever made latkes for Dave. He grew up eating them from his grandmother – so I had a lot to live up to. Latkes are a potato pancake eaten in particular at celebrations in the Jewish faith. Frying Made Healthy

I love to eat healthy, but every once in a while, fried foods tempt me! With that said, I decided to find a way to make them a little better for me. Last night, I made fried mahi with steamed green beans and wild rice. Instead of using regular bread crumbs, I ground up oats and spices to create my own. This helped eliminate the processed ingredients that bread crumbs contain.
