Thanksgiving Leftover Ideas

It’s the day after Thanksgiving and you know what that means… leftovers! All the food that we couldn’t possibly have finished yesterday is on today’s menu as well, but why stop there? I have made it my mission to find some amazing and easy to fix up recipes for all these leftovers from our Thanksgiving feast.

Thanksgiving Leftover Pizza

Pizza and leftovers together you say!? This recipe’s name has me salivating already!

INGREDIENTS NEEDED:

1 pound of pizza dough

2 tablespoons of olive oil (divided)

1 ½ cups of sliced fresh mushrooms

2 teaspoons of minced garlic

1 ½ cups of turkey gravy

2 cups of chopped cooked turkey

1 ½ cups of mashed potatoes

2 cups of mozzarella cheese

¼ cup of chopped fresh parsley

½ teaspoon of garlic powder

¼ cup of garlic salt

Kelapo Ghee Cooking Spray

For this recipe, preheat your oven to 450 degrees and then spray the Kelapo Ghee Cooking Spray on the pizza pan you’ll be using. Roll the dough onto the pizza pan. Next, pour 1 ½ tablespoons of olive oil in a skillet and heat on medium-low. When it’s heated up add the mushrooms and garlic until everything is tender so about 5 to 10 minutes. Spread your turkey gravy over the pizza dough and then add your mushrooms on top. Make sure to spread evenly! Next add the chopped turkey and various spoonfuls of mashed potatoes over the pizza. For all those cheese lovers put as much mozzarella as you like on top, but we do recommend only 2 cups.

With the remaining ½ tablespoon of olive oil, garlic powder and garlic salt mix the ingredients to coat the pizza crust with. Now, time to bake your pizza! Put it in the oven for about 12 to 15 minutes or until you see the cheese has melted. Pizza is now served!

INGREDIENTS NEEDED:

¾ cup of lemon juice

1 cup of dried cranberries

1 ½ cup of shredded cooked turkey

1 cup of prepared stuffing

4 ounces of cream cheese

¼ cup of turkey gravy

1 package of wonton wraps

3 cups of canola oil

2 tablespoons of minced onions

1 tablespoon of lime juice

1 teaspoon of seeded and minced jalapeno peppers

1 teaspoon of minced garlic

1 teaspoon of water

salt to taste

First thing to do is add the lemon juice over the dried cranberries in a bowl and set it aside so the cranberries can soak up the juice. In another bowl, put the turkey, stuffing, cream cheese, and turkey gravy and mix thoroughly. Place the wonton wrappers in various sections of your counter top and let’s begin! With a tablespoon grab the filling you’ve just made and put it in the center of the wrapper. Moisten two opposites edges of the wrapper with a finger lightly dipped in water and then fold the wrapper in half the long way. Make sure to press the edges together with a fork. Next, sprinkle the wrapper with salt for added taste. Now, heat the canola oil in a skillet on medium heat and pan fry the wontons until crisp and golden brown, which means about 2 minutes on each side. To drain the excess oil place paper towels on a plate and toss on both sides. Let cool for about 5 minutes before serving.

To make the cranberry dipping sauce drain the lemon juice from the bowl you filled. Put the cranberries into a food processor until the cranberries are finely chopped. Transfer into a bowl and mix the onions, lime juice, jalapeno pepper, garlic and water. You have now created Thanksgiving leftover wontons!
