Tropical Flavors Accentuate Coconut Rice

 

Island Chicken with Tropical Salsa and Coconut Rice! Yum!

I rarely feature coconut oil recipes that actually taste like coconut because I like to show its versatility. But I went to Bahama Breeze the other night, where I ordered ahi tuna with a side of coconut rice, and I thought how easy it would be to duplicate! Theirs has just the right amount of sweetness (not much) that goes great with the salty flavor of the soy sauce. Here’s my best attempt, I think you will really like it!

 

 

 

 

 

Coconut Rice:

3 cups long grain white rice

2 cups coconut milk (I like So Delicious brand)

2 cups water

1 teaspoon Kelapo coconut oil

1 teaspoon salt

 

Combine all ingredients in a saucepan. Bring to a boil over high heat, cover tightly, reduce heat to very low, and simmer for 20 minutes. Fluff rice when cooked.

 

This would go great with my favorite Island Chicken with Tropical Salsa coconut oil recipe.
