Chocolate Chip Cookie Dough Bites

When is the last time someone caught you sneaking a spoonful of cookie dough from the refrigerator or from the mixing bowl while making cookies? For me it’s just about every time I make cookies, even though I know the raw egg can do some damage. So, I finally decided to make my own eggless cookie dough that is meant just to snack on. You can keep it in the refrigerator for those late night cravings or when you just need a little sugar. It didn’t last very long in my house though. Between my huge sweet tooth lately and Pete, they disappeared in a heartbeat.
Eggless Chocolate Chip Cookie Dough Bites
Adapted from Foods For The Soul
1 c all-purpose flour
1/8 tsp salt
1 tbsp Kelapo coconut oil, melted
¼ c unsweetened applesauce
½ tsp vanilla extract
½ c light brown sugar
4 tsp mini semi-sweet chocolate chips
In a medium bowl, stir together the coconut oil, applesauce, and vanilla until thoroughly combined. Mix in the brown sugar, making sure to remove any lumps. Add in the flour and salt, stirring just until incorporated. Fold in the chocolate chips.
Refrigerate for 20-40 minutes. This will make it easier to handle so it doesn’t stick to your hands when you are rolling them into balls.
At this point you can leave the cookie dough in the bowl and just cover, keep refrigerated and dig in with a spoon when your cravings call or you can turn them into easy, poppable bites. Roll the cookie dough into 32 little balls, using between 1 – 1½ teaspoons of dough in each ball. Place in tupperware until ready to serve.
