Dark Chocolate Peppermint Popcorn

Just in time for the holidays!

Today is National Chocolate Covered Anything Day and there’s so much to be made. I have a love of chocolate and have found covering fruits, popcorn and other confections just makes life a little sweeter. The holidays are right around the corner now, so I’ve decided to start brainstorming what treats I can make for parties, family gatherings, and also for cute DIY gifts. I’ve taken my love of peppermint bark and decided to turn it into dark chocolate covered peppermint popcorn; a treat that is sure to please. This recipe will give a sweet and salty flavor, along with a crunch from the popcorn and peppermint.

Instead of using butter to melt down my chocolate, I’ll be using coconut oil, which can be replaced in any recipe in a 1:1 ratio. Coconut oil has been my go-to ingredient for melting chocolate, especially white chocolate. The clumps and burning that have once occurred will be no more. Since I had all the ingredients in my pantry and already purchased candy canes to put onto my Christmas tree, I decided to whip up a batch this weekend for a party. This recipe was a hit! Let’s take a look at what you’ll need:

Ingredients

¼ cup whole grain popcorn kernels

1 small brown paper bag

½ cup dark chocolate chips

1-2 teaspoons peppermint extract, to taste

1 tablespoon Kelapo Coconut Oil

2 candy canes, crushed

Directions

  1. Fill brown paper bag with kernels. Fold bag over 3 or 4 times.
  2. Place bag upside down in microwave, making sure it is steady so it doesn’t fall over during microwaving. Microwave for 3 minutes or until you hear the kernel popping slow down to about 2 seconds between pops.
  3. Pour popcorn onto a large sheet lined with parchment paper and set aside.
  4. Place dark chocolate chips and coconut oil over a double boil until completely melted. Add in peppermint extract and stir thoroughly.
  5. Drizzle dark chocolate over popcorn, coating to your liking.
  6. Next, sprinkle crushed candy canes over the top layer and place in the refrigerator for 10-15 minutes to set.
  7. Serve popcorn in a decorative bowl for everyone to enjoy!
