Apple, Coconut, & Walnut Protein Muffins

We recently partnered up with Clean Eating & Focused Training to giveaway a jar of Kelapo coconut oil! They created this amazing recipe for apple protein muffins to share with all of you! Here’s what they had to say about coconut oil and don’t forget to try their amazing recipe!
You can use coconut oil as a substitute for basically any oil in cooking. It is a healthier alternative to vegetable oil or butter. Muffins are typically loaded with oil, butter and sugar. Using coconut oil in baked goods helps to add moisture to the treats and it is much better for you!
Apple, Coconut, & Walnut Protein Muffins
-1 1/2 tablespoons melted Kelapo Coconut Oil
-1 1/2 cups rolled oats
-1/4 c unsweetned coconut flakes
-1/2 c chopped walnuts (Chop up more if you want to sprinkle them on top of the muffins.)
-2 scoops RAW protein powder (or your protein powder of choice.. I recommend using a vanilla flavor, or flavorless)
-1 medium apple, chopped into small cubes-4 egg whites
-1 egg yolk
-1 cup non fat Greek yogurt
-2 tablespoons of honey (Add more if you like your baked goods sweet.. I don’t like things overly sweet so I only used a little bit of honey!)
-3 tablespoons of flax seeds
-2 tsp cinnamon
-1/2 tsp baking powder
Preheat oven to 350 degrees. Melt coconut oil, and mix all ingredients together. Place the batter in a lined muffin tin. (Batter will be very thick). Bake the muffins for 10-15 minutes, or until the tops get brown. Recipe makes 12 muffins.
**Note- these muffins are very dense! They are chock full of nuts, oats, and seeds. They are very filling, and not your typical cake-like muffin!
