Apple Pie French Toast

Happy National French Toast Day!  This weekend I decided to skip the malls and head to my local farmer’s market to pick up some fresh fruits and veggies.  Among those fruits were some delicious apples that I had the perfect idea for…combining apple pie with french toast.  Yum!  The perfect breakfast.  This recipe is a lot easier than it sounds and is perfect for a lazy Sunday morning.  Serve with scrambled eggs and bacon for a complete breakfast that will last you until dinner time.

Apple Pie French Toast

 

Sauteed Cinnamon Apples:

  • 1/4 cup Kelapo coconut oil
  • 4 large tart apples – peeled, cored and sliced 1/4 inch thick
  • 2 teaspoons cornstarch
  • 1/2 cup cold water
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon

 

In a large skillet or saucepan, melt coconut oil over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.

Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and set aside.

 

French Toast:

Adapted from this recipe

  • 2 tablespoons all-purpose flour
  • 1/2 cup milk
  • small pinch salt
  • 2 eggs
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1-1/2 teaspoons white sugar
  • 6 thick slices bread
  • Kelapo coconut oil, for greasing griddle

 

Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.

Heat a lightly oiled griddle or frying pan over medium heat.

Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Top with cinnamon apples and sprinkle with some extra cinnamon and powdered sugar. Serve hot.

 

This recipe is so good you won’t even need syrup! Enjoy!
