Berry Up Your Diet

I love berries. I could eat an entire bowl, case, truckload of berries if left to my own devices. What makes it even better – is that they are so good for you! WebMD posted an article saying if you only change one thing about your diet this summer, berry it up.

Berries and Coconut Oil: A True Summer Love Story!

So why all the fuss? Whether it’s blackberries, blueberries, or strawberries, these fruits are rich in antioxidants and fiber. Antioxidants are believed to help prevent tissue damage and even some age-related illnesses. Fiber of course helps regulate your insides, but it can also help keep cholesterol low; which is perfect because so does coconut oil! Even Dr. Oz says the lauric acid in extra virgin coconut oil increases the good HDL cholesterol which may help improve overall levels. Mix the two, and magic happens!

The average adult on a 2,000 calorie diet should aim for at least two cups of fresh fruit a day. Again, I could knock that down in a heartbeat, but sometimes I like to shake things up. And as an added bonus, coconut oil makes berries takes that much better! An easy way to mix summer berries and coconut oil is with a smoothie, like our Strawberry Protein Shake or Lactose-Free Shake. I’m a huge chips and salsa fan – so this Fruit Salsa is a great party dish.

Now mix coconut oil and berries in a baked good, and that’s my definition of heaven. Coconut oil has kept all my cakes and cookies extra moist. Give our Homemade Blueberry Muffins or Chocolate Strawberry Shortcake a try!
