Buffalo Chicken Dip
Buffalo Chicken Dip
With football season well under way it is time to break out all of the recipes for dips and party foods. One of Pete’s favorites is Buffalo Chicken Dip. You can buy a packaged one in the store, but we tried that and it was not the best. This past Sunday I tried to make my own and it turned out amazing; 10 times better than the kind you can buy in the store, plus it is soooo easy! Try this out with our recipes for shredded chicken and homemade tortilla chips made with coconut oil.
Remember: This isn’t the healthiest recipe, but it’s ok to splurge every once in a while as long as it is within moderation.
Buffalo Chicken Dip
2 (8 ounce) packages cream cheese, softened (I used 1/3 less fat)
1 cup ranch dressing
3/4 cup buffalo wing sauce (I used Frank’s)
1 – 1 ½ cups shredded chicken (more or less depending on how much chicken you want)
shredded cheddar cheese, to top
Homemade tortilla chips
Kelapo coconut oil non-stick cooking spray
Directions:
Whisk together cream cheese, ranch, and buffalo sauce until smooth. Fold in shredded chicken.
Spray pie plate with coconut oil cooking spray. Pour mixture into dish and bake at 350 degrees for 15 minutes.
Top dip with as much cheddar cheese as you wish and return to oven for an additional 10 minutes or until the cheese is melted and bubbly.
