Carrot Fries with Vegan Ranch Dipping Sauce

Pre-Cooked Carrot Fries

Carrot fries are something that I keep seeing  on my Pinterest and I am intrigued. I love to make Sweet Potato Fries so I can imagine that carrot fries would be awesome as well! I really liked the thought of these because my son is a huge carrot fan but doesn’t always finish carrots because they are so hard. Since he is only two I can imagine that it is difficult for his tiny teeth to eat raw carrots but he loves them, so I can’t deny him them. When I saw this recipe for carrot fries I felt the need to try them, not only as a soft alternative for my son but because they looked DELICIOUS!

When I made these fries I honestly only used about 2 whole carrots. I didn’t want to make too many but now I wish I would have made more! These were so good and were eaten up so quickly because I had my niece and nephew over as well as my little guy. I made the recipe my own and made some vegan ranch dipping sauce…to complete the healthy snack idea! Check it out below:

Ingredients for Carrot Fries:

2 whole carrots

Kelapo Coconut Oil Cooking Spray 

1 tablespoon Kelapo Coconut Oil; melted

salt and pepper; to taste

1 teaspoon paprika

1 teaspoon garlic powder

Ingredients for Vegan Ranch Dipping Sauce:

Adapted from www.food.com ; Yields 1 cup dressing

Carrot Fries with Vegan Ranch Dipping Sauce

1/2 cup vegan mayonnaise

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/8 teaspoon black pepper

1 teaspoon parsley

1/4 cup unsweetened soy milk

Directions:

  1. Preheat oven to 375 degrees.
  2. Whisk all dipping sauce ingredients together and chill for 30 minutes.
  3. Cut carrots into desired size.
  4. Spray baking sheet with Kelapo Coconut Oil Cooking Spray
  5. In a small bowl add melted coconut oil and carrots and mix with hands until fully coated.
  6. Place carrots on baking sheet and top with desired spices.
  7. Bake for about 20 minutes or until browned.

Yummy Carrot Fries!

These fries came out so nicely! I would recommend baking on 350 degrees and keeping a close eye on them because mine did come out a little “burnt” on the edges, but I liked the flavor! I couldn’t even tell you that the ranch was a vegan ranch it tasted awesome and I highly recommend serving cold, the colder the better in my opinion. The cooking spray kept the carrot from sticking the baking sheet and also gave a delicious hint of sweet taste to this veggie!
