Ingredients:
1 Ib Brussels Sprouts
1 Ib Broccoli Crowns
1 Ib Shiitake Mushrooms
2 C Grape Tomatoes

Crazy Coconut Veggies
3 Tbsp. Kelapo Coconut Oil
Sea Salt and Pepper to Taste
Instructions: Wash ingredients thoroughly. Halve the Brussels Sprouts and the Grape Tomatoes. Cut the Broccoli Crowns into bite-sized pieces. Combine ingredients and toss until well mixed. Preheat oven to 350 degrees Fahrenheit. Roast vegetables for approximately 35-40 minutes or until golden brown. Brussels Sprouts should be fork-tender. Serve in small bowls and enjoy!
