Creamy Chicken Orzo     

Orzo is a fun dish because it combines the taste and texture of rice and pasta. Yay for yummy carbs! The way I get this dish to be creamy is by using Kelapo Ghee. Using ghee gives this recipe a mouthwatering taste that will have your guests asking for seconds!  

Creamy Chicken Orzo with Kelapo Ghee

Ingredients: 

  • Kelapo Ghee (1 tablespoon) 
  • Chopped Onion (1 cup) 
  • Chopped Celery Ribs (1 cup) 
  • Peeled and sliced Carrots (1 cup) 
  • Minced Garlic (4 cloves) 
  • Chicken Broth (8 cups) 
  • Shredded Chicken (2-3 cups) 
  • Orzo (1 lb box) 
  • Minced Parsley (1 tablespoon) 
  • Salt (1 teaspoon) 
  • Pepper (¼ teaspoon) 

 

Instructions: 

  1. Using a large pan, add 1 tablespoon of Kelapo ghee over medium heat. Then, add in your chopped onion, carrots, and celery; cook for about 7 minutes. 
  2. Next, add 4 cloves of minced garlic to the pan and cook for 2 more minutes. Pour in 8 cups of chicken broth and bring to a boil. 
  3. Add 2 to 3 cups of shredded chicken and a box of orzo. Reduce the heat. Lastly add in the seasonings: 1 tablespoon of minced parsley, 1 teaspoon of salt, and ¼ teaspoon of pepper. Let the mixture simmer and cook for about 20 minutes, or until orzo has absorbed most of the liquid. 
  4. Serve immediately and enjoy!
