Raspberry Protein Smoothie

Ready for Breakfast!

Happy New Year’s Day! Now that the Holidays are officially over until Valentine’s Day, there’s no excuse for eating bad. I’m taking initiative today to start day one of clean eating, which I’m actually excited about. I know that some weight gain may occur within the November and December months, but don’t let it get you down. To start the journey of getting back to clean eating, I give away any junk food that may be in the house. If it’s not in my possession, I won’t be eating it – simple as that!

Next, I make sure to have a balanced breakfast starting January 1st. Since New Year’s Eve was the night before, I’m usually not super hungry, so I whipped up a raspberry protein shake. This recipe contains coconut oil for a serving of healthy fats, raspberries for antioxidants, almond milk and protein powder for our serving of protein. Coconut oil has been recommended for its potential fat burning abilities and I have actually had a great experience with improved energy when consumed.

When making protein smoothies with coconut oil, I have found that it’s best to blend all ingredients together and then pour over ice. This way, you avoid the possibility of coconut oil solidifying in the blender. Coconut oil turns into a solid state if it’s below 76 degrees, so the ice can definitely make this occur.

Here’s what you’ll need:

Ingredients

2 cups unsweetened almond milk

1 cup raspberries

1 tablespoon coconut oil

1 scoop vanilla protein powder (I used Raw Fusion)

Ice

Directions

  1. Place all ingredients in a blender or Magic Bullet.
  2. Add in ice if desired or blend completely without ice.
  3. If blended without ice, add ice to desired cup and pour protein smoothie over top. Otherwise, pour blended smoothie into glass and enjoy!

You can double this recipe if you want to make a batch of smoothies for the family on New Year’s morning – which I highly recommend! This recipe is great because it’s gluten free and Vegetarian friendly. Feel free to add any other berries or even chia seeds for added health benefits.
