Father’s Day Dinner Ideas

My dad always says there’s nothing like a good steak to feed the belly and I know a lot of dads out there would agree. That means I’m cleaning up the grill this weekend and cooking up churrasco with chimichurri sauce for Father’s Day. My dad never asks for much and he’s always there when you need him so how could I not make his favorite dish on his special day? I hope you celebrate this Father’s Day close to the ones that you consider to be your father figure because there’s nothing better than celebrating with the ones we love.

Churrasco Steak with Chimichurri

This Argentinian dish is by far one of my favorites (and yes, I got it from my dad)!

Ingredients needed:

1/3 cup of grapeseed oil

15 cloves of garlic (smashed)

1 cup of onions (thinly sliced)

2 teaspoons of oregano

1 cup of orange juice

1 2lb skirt steak

Chimichurri Sauce

8 cloves of garlic (minced)

3 limes (zested and juiced)

1 ½ cups of fresh parsley (chopped)

1/3 cup of fresh oregano (chopped)

1/3 cup of red wine vinegar

2 tablespoons of chili flakes

1/3 cup of olive oil

Kosher salt (to taste)

Black pepper (to taste)

1 tablespoon of Kelapo Ghee

First thing you want to do is cut your 2lb steak into 4 8oz steaks. Next, in a large Ziplock bag add the grapeseed oil, smashed garlic, sliced onions, oregano, and orange juice then shake or mix with a spoon. Add the steaks inside the Ziploc bag and let marinate overnight or for a 24-hour period in the refrigerator. To make the chimichurri sauce simply add all the ingredients into a bowl and mix them up well. Then cover it up and refrigerate overnight so it can soak up all the flavors.

Once the steak has marinated overnight, take out of the bag and season with some salt and pepper. Place them on a hot grill for about 3 minutes on each side. Remove the steaks from the grill and let them rest. Top with the Kelapo Ghee to build flavor. Once finished plate with the chimichurri sauce on top. Enjoy with some grilled potatoes or rice and beans.
