Ginger Snaps with Coconut Oil Frosting
Coconut Oil Frosting
1/2 cup Kelapo coconut oil, softened
1 tsp vanilla extract
5 cups powdered sugar
5 Tbsp filtered water
In a medium mixing bowl, combine soft coconut oil with vanilla using an electric beater. Next, slowly add in powdered sugar, one cup at a time, while keeping your electric beaters on low speed. Frosting will thicken. Once you have all the powdered sugar mixed in, slowly drizzle in your filtered water until you reach the desired consistency.
Note: Coconut oil melts above 75 degrees F, so you’ll want to apply quickly and place them in the fridge to harden.
