Fried Goat Cheese Salad Bites
Salad with Goat Cheese, Craisins, Roasted Pumpkin Seeds, and Balsamic
Chances are if there is something with goat cheese on a menu, I will order it. Especially if it’s a salad with fried goat cheese bites. YUM! I never realized how simple these are to make until this month’s Do-It-Yourself challenge. Gourmet salads here I come!
First, make a small, flat ball with the cheese and pack it tight. Put it in the freezer for 15-20 minutes.
Dredge it with flour, egg wash, then bread crumbs (you can also mix the bread crumbs with your favorite herbs. I like dried thyme or Penzey’s Italian Herb Mix)
Heat ½” coconut oil in a frying pan until it is very hot. I like to test it by flicking a tiny bit of water into it and if it sizzles, its ready to go. Fry each goat cheese bite for about 10 seconds, making sure it is golden brown, and then flip over and repeat. Remove with tongs and drain on paper towels until ready to serve.
Top on salad or crusty bread and enjoy 🙂
