Homemade Pizza Crust

Jen's favorite!

It’s Pizza Week! Doesn’t exactly mesh with the new years resolutions, huh? Actually, pizza can be sensible without sacrificing too much. If you go lighter on the cheese, and top with tons of veggies, you can feel pretty good about indulging in a few slices of ‘za. (Remember that? The 90s were so cool.)

Coconut oil makes a great pizza crust. Or you can make your favorite recipe and use the coconut oil to keep the crust from sticking to the pan. Here’s our easy pizza crust recipe:

1 packet active dry yeast

1 tsp sugar

1 cup warm water

2 1/2 cups flour

2 Tbsp Kelapo coconut oil

1 tsp salt

Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes. Stir in flour, salt and coconut oil. Beat until smooth. Let rest for 5 minutes. Turn dough out onto a lightly floured surface and pat or roll into a round. (or get crazy with it and flip it in the air! Just don’t blame me when your kitchen is COVERED in flour) Transfer crust to a lightly greased pizza pan. Spread with toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

What are your favorite pizza toppings? I’m a pineapple and mushroom kind of girl (especially with coconut oil. Yum!)
