Mahi Mahi Tacos

Tomorrow is Taco Tuesday, my favorite day of the week! Taco Tuesday is a big deal in my house because it’s one of those meals that brings the whole family together. The kids really enjoy making their own tacos and adding whichever ingredients they like. I always bake my fish with a dollop of kelapo ghee so the fish doesn’t end up drying out. If you haven’t tried ghee, I highly recommend it!

Ingredients: 

  • 1 tablespoon Kelapo ghee 
  • 2 Mahi-Mahi filets
  • 4 corn tortillas
  • 1 cup shredded lettuce
  • 1 avocado
  • 1/4 cup plain greek yogurt
  • 2 Tbsp water
  • 1/2 tsp paprika
  • 1/4 tsp crushed red pepper
  • pinch of salt
     

Directions: 

  1. Add Kelapo Ghee to a pan and bake the thawed Mahi-Mahi filets at 350 degrees for about 30 minutes (or until flaky).
  2. While the fish filets are baking, mix the greek yogurt and water in a bowl.
  3. Place shredded lettuce, baked fish filet (sliced), and avocado in each tortilla.
  4. Drizzle the yogurt and water mixture over each taco.
  5. Top each taco with paprika, crushed red pepper, and salt.
  6. Enjoy!
