Maple, Pecan, and Sour Cherry Granola   

My go-to breakfast is a quick bowl of fruit and yogurt topped off with some delicious, crunchy granola. It’s such an easy and nutritious breakfast when you’re on the go. However, store-bought granola is loaded with sugar. I recently created my own granola with less sugar and more protein. The added Kelapo coconut oil will give you that boost of energy and an extended feeling of fullness throughout your busy day. The granola can be stored for about 3 weeks in an airtight container. You can even substitute the dried cherries for dried cranberries or add less sugar if you’d like. There is so much room to play around with this recipe. Enjoy! 

Yogurt with Granola and Cherries with Kelapo Coconut Oil

Ingredients: 

  • 3 tablespoons Kelapo coconut oil 
  • 2 cups old-fashioned oats 
  • 1 cup chopped, pecans 
  • 1 cup pepitas pumpkin seeds 
  • 1 cup unsweetened coconut shavings 
  • ½ cup golden flaxseed 
  • ½ cup sliced almonds 
  • ½ cup toasted wheat germ 
  • ¾ cup pure maple syrup 
  • 1/3 cup light brown sugar 
  • 1 ½ teaspoons vanilla extract 
  • ½ teaspoon kosher salt 
  • 1 cup dried sour cherries 

For Serving: 

  • Greek OR non-dairy yogurt  
  • Berries OR sliced fresh fruit 

Directions: 

  1. Preheat oven to 375 degrees Fahrenheit. On a rimmed baking sheet, sprinkle 2 cups of old-fashioned oats, 1 cup of chopped pecans, 1 cup of pepitas pumpkin seeds, 1 cup of unsweetened coconut shavings, ½ cup of golden flaxseed, and ½ cup of sliced almonds. Once the oven is preheated, bake for 10-15 minutes (until coconut is lightly brown) —stirring occasionally. 
  2. Reduce the oven temperature to 300 degrees Fahrenheit. Transfer the baked mixture from the baking sheet into a large bowl. Stir in ½ cup of toasted wheat germ into the mixture. 
  3. In a small saucepan, bring ¾ cups of pure maple syrup, 1/3 cup of light brown sugar, 3 tablespoons of Kelapo coconut oil, 1 ½ teaspoons of vanilla extract, and ½ teaspoon of kosher salt to a boil for about 4 minutes (until sugar dissolves)—stir occasionally. Pour over the baked oat mixture to the saucepan and stir until fully coated. Transfer this mixture onto another rimmed baking sheet. Bake in the preheated 300 degrees Fahrenheit oven for about 25-35 minutes (until deep golden brown).  
  4. Lastly, toss 1 cup of dried sour cherries into the granola straight out of the oven, then let the granola cool. Pour the granola into a bowl and serve with your choice of yogurt and fruit. Enjoy!
