Meals Under $20 – Dinner & Dessert

Everyone is looking to serve delicious dinners to their families while saving time and money. Saving money doesn’t mean that you have to serve mediocre meals just to cut back! We are going to show you how to make a scrumptious dinner and dessert for under $20.

Dinner: Chicken Cordon Bleu

     Ingredients:

        3 chicken breasts

        4 slices of ham; cut in half

        8 oz of cheese; sliced

       1 tbsp. Kelapo Coconut Oil

       1 tsp. paprika

       1 tsp. garlic powder

       Salt and pepper; to taste

   Directions:

  •  Preheat oven to 365 degrees F
  •  Wrap ham slices around sliced cheese
  •  Cut chicken breasts in half and stuff two ham and cheese pieces inside

    Chicken Cordon Bleu

  •  Coat top of chicken with coconut oil, paprika, garlic powder, salt and pepper
  •  Place chicken in a baking dish and bake for 30 minutes

The end result is an easy and delicious Chicken Cordon Bleu that smells amazing! I served the chicken with steamed broccoli, the two complimented each other very well.  The total cost for this meal, at my local grocery store, was about $10.

Dessert: Brownie In A Mug

     Ingredients: 

          1 tbsp. cocoa powder

          1 tbsp. flour

          1 tbsp. brown sugar

          1 tbsp. water

          1 tbsp. Kelapo Coconut Oil

           Pinch of salt

 Directions:

  • In a microwave safe mug, combine all ingredients and stir
  • Microwave for 30 seconds
Brownie in a mug is a fast and budget conscious dessert for anyone to enjoy. This is a great dessert on a budget because the ingredients are mostly things we all already have and it can be made again and again. If you don’t have these ingredients at home the total cost for all ingredients is about $7 total, at my local grocery store.
