Almonds ready to go for Dad!

Hello everyone! As you all know, today is Father’s Day. Have you done anything for your dad yet? If not, don’t worry I have a great gift idea for you, and it’s easy to do! I don’t know about you but my dad loves roasted almonds and loves all things coconut, so I figured why not try and find a way to combine the two? By using coconut oil instead of butter, you can help eliminate the sodium and cholesterol recipes. Almonds are one of the healthiest tree nuts, full vitamin E, calcium, magnesium and potassium, as well as fiber and potassium. So what’s better than the gift of health for dad?

I searched, and I searched and finally I found a recipe that was worth of my dear old man. On the Healy Real Food Vegetarian blog there is a great recipe for Sweet Cinnamon Coconut Roasted Almonds – I know my dad will love these so I just had to try my hand at making them.

Here’s what you need

1.5 cups almonds
1/4 tsp salt
3 tsp sugar
1 tsp cinnamon
1 tbsp Kelapo Coconut Oil                                                                                                             
2 tsp shredded coconut

Here’s what you do

  1. Pre-heat oven to 300°
  2. Place almonds in bowl and mix in the salt, sugar, cinnamon, and melted coconut oil
  3. Once ingredients are evenly mixed place almonds on a baking sheet, either line the baking sheet or use Kelapo Coconut Oil Cooking Spray to prevent the nuts from sticking to the sheet.
  4. Set cooking timer for 10-15 minutes; make sure the almonds do not burn.
  5. Once almonds are done, mix in the shredded coconut and serve

Because this is a Father’s day gift, I found a nice container I am going to put the almonds in to improve the presentation. I know my dad is going to love this healthy snack, I really hope yours does too.
