Paleo Pumpkin Pancakes

The only thing better than Sunday Brunch is Sunday Brunch during PUMPKIN season! This recipe for paleo pumpkin pancakes will make you do a happy dance at first bite .. and make you feel a little less guilty about bottomless mimosas!






Paleo Pumpkin Pancakes
½ cup well drained pumpkin puree
1 egg
2 tbsp almond flour
¼ tsp ground cinnamon
Kelapo Ghee Spray
Makes two personal pancakes. Scale up for brunch parties!

In a small bowl beat the egg, then add pumpkin puree and mix well. Add in the almond flour and mix until all ingredients are combined.

Spray the skillet with Kelapo Ghee Spray and turn on stovetop to medium-high setting.

Spoon batter (in 1 tablespoon dollops) onto skillet. Cook until surface of pancakes have some bubbles and sides of the pancake firm up (or about 2 minutes). Flip the pancakes and cook the underside (about 45 seconds).
