
PB&J Smoothie
Happy Back to School week or possibly back to school month if you haven’t started yet. Although my kids aren’t in school yet I know that this time is very busy and hectic for parents! Since being on maternity leave I have realized just how much my son absolutely loves peanut butter and jelly sandwiches. I understand that it’s not the healthiest of choices to feed him so I found an alternative that omits the bread and jelly while adding a natural energy booster, coconut oil!
Ingredients:
16oz fresh raspberries or strawberries
1 cup peanut butter
1 cup almond milk
1 tablespoon honey, optional
1 tablespoon Kelapo coconut oil
2 cups ice
Directions:
1. Blends everything together except for the coconut oil.
2. Once all ingredients are well blended, add coconut oil and blend.
3. Serve and enjoy!
I really enjoyed this recipe because you’ve got a healthy variety of ingredients including protein, fresh fruit and a great source of calcium. The coconut oil also works as a natural energy booster making this a perfect breakfast smoothie or great for an after school pick-me up! To make this an even greater smoothie, particularly for breakfast, add rolled oats to your ingredients. Oats are filled with vitamins and packed with a good source of fiber.
