Potluck Recipe Ideas

While I am all for potlucks, it is always a struggle to figure out what to cook! The idea is for everyone to enjoy it, but it’s difficult to cater to everyone’s likes and dislikes. For this very reason, I’ve prepared this list of the top recipes to make for any potluck you’re attending!

Buffalo Chicken Dip

You can never go wrong with this classic dish!

Ingredients needed:

2 cups of chicken breast (cooked)

⅔ cup of buffalo sauce

8 oz cream cheese (softened)

⅔ cup of sour cream

2 ribs of celery (thinly diced)

2 green onions (sliced)

1 teaspoon of garlic powder

1 cup of shredded cheddar cheese

1 cup of shredded mozzarella cheese

Salt (to taste)

Pepper (to taste)

Start by preheating your oven to 350 degrees. First thing you want to do is cook the 2 chicken breasts. You’ll want to season each breast with a sprinkle of salt and pepper. Once the chicken is completely cooked, dice them up in very small pieces. If you’re like the chicken shredded, you can do that instead. Place the chicken bites in a medium-sized bowl and add the buffalo sauce. Make sure all chicken bites are completely coated. In a separate bowl, add the cream cheese and blend with a hand mixer until a creamy consistency. Next, add in the sour cream and blend with the hand mixer. Once blended, add in the celery, half of the shredded cheddar cheese, green onion, half of the mozzarella cheese, garlic powder and half of the sauced chicken. I sometimes add ranch seasoning for extra flavor! Using a non-stick spatula mix all the ingredients together and spread them on a 9×9 pan and top with the remaining chicken and cheese. Pop it in the oven to bake for about 20 to 25 minutes then it’s ready to serve! Perfect to eat with any sides!

Caramelized Ham And Swiss Buns

Ingredients needed:

1 package of Hawaiian sweet rolls

½ cup of horseradish sauce

¾ lb sliced deli ham

6 slices of swiss cheese

½ cup of Kelapo Ghee

2 tablespoons of brown sugar

2 tablespoons of finely chopped onion

1 tablespoon of spicy brown mustard

2 teaspoons of poppy seeds

1 ½ teaspoon of Worcestershire sauce

¼ teaspoon of garlic powder

Kelapo Coconut Oil Non-Stick Cooking Spray

First to do is take your 13×9 inch baking pan and grease it with Kelapo Coconut Oil Spray. Once it’s greased, cut each roll in half and place all the bottom buns in the pan. Spread the horseradish sauce on each bottom bun and add the deli ham slices on top. Cut the swiss cheese slices into smaller squares and place on top of the ham slices. Next, add the top bun and set aside. To make the sauce, melt down the Kelapo Ghee in a pot over medium-high heat. Once completed melted, add the onion and cook for about 2 to 3 minutes. Next, add the brown sugar, spicy mustard, poppy seeds, Worcestershire sauce, and garlic powder and whisk all the ingredients together until thoroughly mixed. Pour the sauce over the rolls and brush the sauce on top of the buns, then cover and refrigerate overnight. The next day, preheat the oven to 350 degrees and bake them covered for about 25 minutes. Take the top off and bake for another 5 to 10 minutes, or until they’ve turned golden brown.

Honey Lime Sriracha Chicken Poppers

This recipe from Tasty is delicious. I changed the original recipe up a bit for my taste.

Ingredients needed:

2 chicken breast (cubed)

2 teaspoons of salt

1 teaspoon of pepper

3 cloves of garlic (minced)

½ teaspoon of ground ginger

1 cup of flour

3 eggs (beaten)

Oil (for frying)

Sauce

5 tablespoons of Kelapo Ghee

⅓ cup of honey

½ cup of siracha

2 tablespoons of soy sauce

3 teaspoons of honey

5 teaspoons of lime juice

2 teaspoons of brown sugar

The first thing to do is cut the chicken breast into strips and then cubes. Add the chicken cubes into a medium-sized bowl and top with salt, pepper, minced garlic, and ginger. Toss until all ingredients are evenly distributed. Next, bread each piece of chicken by placing it into flour first then into the beaten egg and flour again. It’s best to have the oil already heated up once you get to this step so you can add the chicken bites in. Make sure it heats up to 375 degrees and then fry the chicken bites in batches. Once all chicken bites are cooked, begin to make the sauce. Add the Kelapo Ghee into a skillet and wait until it has melted down then add the soy sauce, sriracha, honey, lime juice, and brown sugar. Cook until all ingredients are well combined, then add in the chicken bites and stir until they’re completely covered. Best served with ranch!
