Energy-Boosting Kale Smoothie

As a mother and a wife I want to ensure that my husband and son are getting nutritious meals throughout the day. This can sometimes be difficult, especially as a working female, because things are always busy and time tends to fly by. At least, that is what it feels like in my household! I’m always looking for new recipes and ways to cut down time in the kitchen, this led me to an article in the New York Times about Recipes for Health.

“Recipes for Health offers recipes with an eye towards empowering you to cook healthy meals every day. Produce, seasonal and locally grown when possible, and a well-stocked pantry are the linchpins of a good diet, and accordingly, each week’s recipes will revolve around a particular type of produce or a pantry item. This is food that is vibrant and light, full of nutrients but by no means ascetic, fun to cook and a pleasure to eat.” This article mentions some delicious ingredients to add to your daily diet:

  1. Kale – A favorite of ours as well, the versatility of this leafy green pairs well with coconut oil if sauteing or blends well into a smoothie if you aren’t too keen on the flavor. An excellent source of vitamins, fiber, and iron in this low-calorie vegetable.
  2. Oil – We personally recommend coconut oil for cooking and baking because of all the health benefits. These health benefits include no trans fat, immediate energy booster and healthy fats. The article also includes adding olive oil into your daily diet, which we suggest using on cold foods like salads or vinaigrettes.
  3. Cauliflower – A huge favorite in the Paleo diet, this veggie can be a bit drab when serving plain. Try making a cauliflower-crusted pizza or cauliflower mac and cheese to please the kids! This vegetable is packed with B vitamins, folate and omega-3 fatty acids.

These are just a few of the ingredients that really peaked my interest within the article. Remember that it is important to buy local and in season whenever possible. This means that your fruits and veggies will be a peak freshness which fills your body with the delicious nutrients to help keep you healthy. Adding coconut oil to your daily diet also helps with boosting you immune system to stay healthy.
