Caramel Pumpkin Cookies

Summer was a amazing! We had so much fun… but I am totally ready for fall! Bring on pumpkin flavored anything, cool evenings and family fun! Thankfully my whole family loves pumpkin too so they are just as excited about this season of the year as I am and they encourage me to keep finding new ways to add more pumpkin to our lives. We are also pretty smitten with caramel… especially when it’s sprinkled with salt, so I created a cookie that is full of fall favorites like pumpkin and salted caramel. Yum!

These cookies took me about 5 minutes to prepare and then 10 minutes in the oven. That means you can have cookies ready to eat in 15 minutes… perfect for busy weeknights! They also make your home smell amazing when they are baking!

 

Recipe for Salted Caramel Pumpkin Cookies

 

Ingredients:

  • 3/4 cup sugar
  • 2 cups all-purpose flour {You might need a little extra depending on the weather. I start with 2 cups and add a tablespoon more at a time. The dough should not be too watery and shouldn’t drip}
  • 1/4 teaspoon salt
  • 1/2 cup canned pumpkin
  • 1 teaspoon pumpkin pie spice
  • 2 eggs
  • 1 1/2 teaspoons baking powder
  • 1/2 cup Kelapo Coconut Oil

Cookie Topping:

  • 1/2 cup confectioners sugar
  • Caramel sauce
  • Salt

Directions:

Pumpkin Cookies

1. Mix all wet ingredients together.

2. Add in all dry ingredients.

3. Mix till combined.

4. Add confectioners sugar to a bowl.

5. Drop a spoonful of dough into the sugar and coat.

6. Place on a cookie sheet that is sprayed with Kelapo Coconut Oil Spray.

7. Bake for 8-10 minutes at 350 degrees.

8. Drizzle with your favorite caramel sauce and a sprinkle of salt.
