Santa’s Favorite Christmas Cookies

The most wonderful time of the year has arrived! Thanksgiving has passed, and everyone has put up their Christmas trees and hung their stockings. As everyone begins to prep for the holidays, I have also begun to make preparations with my family. Every year my cousins prepare their favorite cookies for Christmas because we all know Santa has a soft spot for cookies! Today I’ve decided to share some of those recipes so you can easily bake Santa’s favorite cookies!

Our first cookie on the list is sugar cookies! These are great because they can easily be made into different shapes and the kids usually get really creative when decorating them with icing.

Ingredients Needed:

1 cup of Kelapo Ghee

1 cup of granulated white sugar

1 teaspoon of vanilla extract

½ teaspoon of almond extract

1 egg

2 teaspoons of baking powder

½ teaspoon of salt

3 cups of all-purpose flour

Kelapo Ghee Spray

You always want to start by preheating your oven and then mix the ingredients. In this case, preheat the oven to 350 degrees. In a bowl, add the Kelapo ghee and sugar until the texture is smooth. Then add the extracts and the egg in that same bowl and mix thoroughly. In a separate bowl, add the baking powder, salt and flour and mix. Then, where you have all the wet ingredients begin adding the flour little by little. The dough might be stiff but if it becomes too stiff put the dough on your countertop surface, wet your hands a little and then start kneading the dough. Last, separate the dough so it is easier to work with and roll out onto a floured surface. Now you can either cut up the dough and make your own shape or get different cookie cutters. After you’re done, use the Kelapo Ghee Spray on the pan of your choosing before laying out the cookies. Bake cookies for about 6-8 minutes and then set aside so they can cool down.  Now you’re ready to start decorating them!

Next cookie on our list are snickerdoodles!

Ingredients Needed:

1 cup of Kelapo Ghee (softened)

1 ½ cups of sugar

2 eggs

1 teaspoon of vanilla

2 ¾ cups of flour

2 teaspoons of cream of tartar

1 teaspoon of baking soda

½ teaspoon of salt

3 tablespoons of sugar

1 tablespoon of cinnamon

For this recipe, pre-heat the oven to 350 degrees. You will be using two bowls for this recipe as well. In one bowl, mix together the flour, cream of tartar, baking soda and salt. In the other bowl, add the Kelapo Ghee and sugar and stir. Then add the eggs and vanilla and blend well. Then mix both the dry and wet ingredients in the one bowl. Make sure to mix thoroughly. Once you’re done making the dough, make 1 inch balls and roll them in the cinnamon-sugar mixture. In a baking pan, add the dough balls but make sure they are 2 inches apart since they will be expanding once placed in the oven. Bake for about 8 to 10 minutes to create the perfect snickerdoodle cookies!

Now, for the last cookie on our list chocolate chip cookies! These are not your average chocolate chip cookies because they’ve been given a little twist. This recipe is Paleo-friendly which we know Santa will love!

Ingredients Needed:

1 ½ cups of almond flour

1 teaspoons of baking powder

½ teaspoon of baking soda

¼ teaspoon of salt

¼ cup of Kelapo Ghee (melted and cooled)

¼ cup coconut sugar

1 large egg

1 teaspoon of vanilla extract

¾ cup of dairy-free dark chocolate (chopped)

Pre-heat the oven to 360 degrees. You’ll want to line a baking sheet with parchment paper and set aside. In one bowl, add the almond flour, baking soda, baking powder and salt and then mix the ingredients. In another large bowl add the Kelapo Ghee and coconut sugar and whisk thoroughly. Next, add 1 egg and the vanilla extract into that same bowl and blend. Then add the flour mixture you had set aside in another bowl to the bowl with the wet ingredients and stir. Now you can add the chocolate chips! Using a spoon measure 1 ½ tablespoon of dough and then roll between the palms of your hands to forma smooth ball. Do this until you’ve placed all the dough balls on the baking sheet. Then you’ll want to get a flat spatula and flatten each dough scoop into ½ -inch-thick round disc. Toss the pan in the oven and these chocolate chip cookies should be ready in about 8-10 minutes!

Make sure to leave Santa a nice cup of milk with your cookies!
