Sheet Pan Sausage and Veggies

Are you in search of a quick, balanced meal for the family? This sheet pan sausage and veggies recipe takes only 30 minutes to cook and will provide all your daily nutrients to start off your healthy New Year right! Not only does the Kelapo ghee add a delicious kick of flavor to this simple dish, but using ghee is a great alternative for butter if you are dairy-free! This recipe can also be modified in many ways, such as using turkey sausage instead of smoked sausage or cauliflower instead of broccoli. It’s a healthy and easy recipe to follow with little to no clean-up for you and your family to enjoy this new year! 

Ingredients:

  • 2 cups diced baby red potatoes 
  • 3 cups halved and trimmed green beans 
  • 2 cups 1 large head of broccoli 
  • 1 ½ cups chopped bell peppers 
  • 13 ounces smoked sausage 
  • 6 tablespoons Kelapo ghee 
  • ¼ teaspoon red pepper flakes *optional* 
  • ½ teaspoon garlic powder 
  • 1 teaspoon paprika 
  • 1 tablespoon dried oregano 
  • 1 tablespoon dried parsley 
  • 1 tablespoon salt 
  • 1 tablespoon pepper 

Serve with: 

  • fresh parsley 
  • rice or quinoa 
  • grated parmesan cheese 

Instructions:

  1. Preheat the oven to 400 degrees. Line a large sheet pan, or 2 small pans, with parchment paper—I recommend using one 15×21 inch sheet pan. Set aside for later. 
  2. Wash all your vegetables. Unpeel and dice 2 cups of baby red potatoes; trim and halve 3 cups of green beans; chop 1 large head of broccoli into 2 cups of florets; chop the bell peppers into 1 ½ cups of 1-inch pieces; and coin the 13 ounces of smoked sausage in ½ inch thick slices. 
  3. Next, transfer all the prepped vegetables and cut sausage onto the lined sheet pan(s). Then, pour 6 tablespoons of Kelapo ghee and sprinkle all seasonings over the vegetables and sausage. Toss the vegetables and sausage to ensure they are evenly coated with the ghee and seasonings. Once they are evenly coated, space out everything on the sheet so they can properly cook in the oven. 
  4. Place the pan(s) in the oven and bake for 15 minutes. After the 15 minutes, take the pan out of the oven to flip the vegetables and sausage. Return to the oven for another 10-15 minutes. 
  5. Take out of the oven and immediately sprinkle over grated parmesan cheese to taste. Serve the vegetables and sausage with rice or quinoa and top the dish with fresh parsley. Enjoy!
