Top Chef Seattle: The Fried Chicken Challenge

We have reached the point in the season where there is no longer immunity, which means we are almost to the end!  By now we should only be seeing top rate dishes, but tonight that may not be the case. Oprah Chicken

Everyone has at least a few great recipes they steal from Mom when they leave the nest. I am so excited to share this one with you, because it is SO good and SO healthy! Victor requests this one at least a few times a month, and it is so easy to prepare that I always oblige. Leftover Spicy Chicken Salad

I love nothing more than using leftovers in a new, exciting way! Especially when it transforms into a much healthier lunch the next day. Here is my favorite use for leftover buffalo chicken (if my fiancé and his friends don’t gobble it all up while watching sports!)   Buffalo Chicken Salad   Ingredients: Mixed green lettuces.
