Mac and Cheese Cauliflower

A lighter version of regular mac and cheese, this recipe replaces the macaroni with cauliflower florets.  I made this recipe last night and adapted it from a version found in Vegetarian Times magazine. Ingredients: 1 head cauliflower, cut into florets 1 head broccoli, cut into florets 3 tbsp unrefined coconut oil 2 cups almond milk 1 tsp minced garlic 2 cups sharp cheddar cheese 1/2 cup nutritional yeast 1 dash cayenne pepper 2 egg yolks 1 1/2 cups breadcrumbs Directions: 1. Homemade Macaroni and Cheese

Throughout the month of November we will be posting recipes for all of your favorite Turkey Day dishes and showing you how you can work coconut oil into each one of them.  Mac and cheese is one of my favorites.  I love making mac and cheese in individual dishes for each guest at the table.  You don’t have to, you can always bake in a large dish instead of individual dishes.
