Coconut Curry Lentil Soup

I love to eat soup, no matter the weather! This coconut curry lentil soup recipe is a wonderful vegetarian option, and the lentils are a great source of protein, but feel free to add whatever meat you like. Although this is a lighter meal, the 2 tablespoons of Kelapo coconut oil will keep you feeling full and satisfied. Tomato Basil Soup along with a side of grilled cheese or fresh bread is one of my favorite fall day meals! It’s so easy to make and you can easily store in the freezer for another cold fall day. Turkey Leftover Soup

Every year my dad makes the best turkey soup from all of our Thanksgiving leftovers. I think I might even look forward to the soup more than the actual holiday meal, it’s that good.
