Chicken Cordon Bleu

Happy National Cordon Bleu Day!  In honor of this, I thought I would share my favorite recipe for Chicken Cordon Bleu.  This is one of Pete’s favorite dishes, so it is on the regular rotation of meals in our house.  Serve with roasted veggies and rice.   Chicken Cordon Bleu 4 boneless, skinless chicken breasts 4 thin slices of ham 6 ounces of swiss cheese, cut into 4 chunks 1 cup flour 2 cups bread crumbs (regular or panko) 2 eggs lightly beaten 4 tablespoons Kelapo coconut oil, melted   Preheat oven to 375 degrees.  Pour melted coconut oil in […]
