Because of the Rocky Road. 

I hope that joke made you giggle! Yes, we’re aware that National Rocky Road Day was on Sunday but who says we can only celebrate on that day? Consider this a hump day treat with the added benefits of the chocolatey goodness that is a Rocky Road! Try any of these recipes so you celebrate the best way!

Homemade Rocky Road Ice Cream

This recipe from Creations by Kara is super simple so I great thing to make with the kids on any summer day!

Ingredients needed:

1 ½ cups of sugar

½ cup of cocoa

5 eggs (beaten)

2 cans of evaporated milk (12 oz cans)

 1 ½ cups of cream

1 can of sweetened condensed milk (14 oz can)

1 teaspoon of vanilla

1 box of chocolate pudding (3 oz box)

2 ½ cups of milk

2 cups of mini marshmallows

2 cups of roasted chopped almonds

Using a large pan add the sugar and cocoa then whisk together. IN that same pan add the eggs and evaporated milk then whisk until you get a smooth consistency. Heat up over medium heat until it becomes thick and starts bubbling. Remember to stir occasionally. Once it starts to boil, remove from heat and place it in a sink full of ice water so that it can cool down. Once cooled, add the cream, condensed milk, vanilla, pudding mix, and milk then mix everything together until you get a smooth consistency. Next, let the mixture sit in the fridge for about 6 to 8 hours or overnight. Last but not least, add the almonds and marshmallows then stir it all together. Place the ice cream into an airtight container and freeze for about 2 to 3 hours. Now, you can enjoy homemade rocky road ice cream!

Rocky Road Fudge

Ingredients needed:

12 oz semi chocolate chips

1 cup of Kelapo Ghee

4 cups of sugar

1 ½ cups of evaporated milk

20 large marshmallows

2 cups of walnuts (chopped)

1 teaspoon of vanilla

16 oz miniature marshmallows

Kelapo Coconut Oil Non-Stick Cooking Spray

First, grab a baking sheet and spread about 2/3 of the mini marshmallows on it then place in the freezer to freeze. While those are freezing up, get a heavy pot and add the milk, sugar and all the large marshmallows. Stir everything together over high heat until it begins to boil. Once boiling, stir occasionally for 6 minutes and then remove from heat. In the same pot, add the chocolate chips and Kelapo Ghee. Stir until the chocolate has melted and created a thick consistency. Now, add the nuts and let the chocolate fudge sit for about 10 minutes or so until it thickens a bit more. Last, add the vanilla and the frozen mini marshmallows and stir together until everything is evenly combined. Grease a 9×13 pan with the Kelapo Coconut Oil Spray and spread the fudge. Pop the pan in the fridge for about 30 minutes to an hour and then enjoy!
