Thirsty Thursday (National Margarita Day!)

I have a treat for all of you on this week’s special of Thirsty Thursday! Naturally, it’s National Margarita Day this week (best Thirty Thursday ever!). I am a huge fan of margaritas so expect something fun for today’s blog post!

Have you found yourself craving margaritas but want something sweet in between? I have the perfect fix to your conundrum:

Cocktail “Box” Cupcakes

Tasty really does come up with the trendiest and delicious recipes. This is the perfect recipe for a Thursday evening with the girls or any Sunday brunch party. This recipe is made up of 3 different “drinks” cupcake style. Now, let’s get to what you’re really here for!

Ingredients needed:

15 oz yellow cake mix (1 box)

16 oz white frosting (3 cans)

Margarita

2 limes (zested and divided + more for garnish)

½ lime (juiced)

4 teaspoons of tequila (divided)

Mudslide

4 teaspoons of cocoa powder (divided + more for garnish)

4 teaspoons of coffee liqueur (divided)

Strawberry Daiquiri

½ cup of strawberry jam (divided)

Follow the instructions of the boxed cake mix. If the cake mix has butter, I recommend substituting it for Kelapo Ghee since it is sodium and lactose-free! Once you’ve finished preparing the cake mix, separate it between three different bowls for the 3 different cupcakes you’re going to make. Feel free to choose the flavor “drink” cupcake you like best and make all 12 cupcakes out of that one! Just increase the amounts for the ingredients by doubling them.

For the Margarita “drink” add the zest of 1 lime into the bowl and whisk to combine. For the Mudslide “drink” add 2 teaspoons of cocoa powder to the other bowl and whisk. For the Strawberry Daiquiri “drink” add 2 tablespoons of strawberry jam in the last bowl and whisk.

Get your cupcake pan ready by adding cupcake paper trays or using Kelapo Ghee Non-Stick Spray. Next, pour the batter and bake as per the directed package instructions of the cake box mix. To know if they’re ready, insert a toothpick in the center of the cupcakes, if it comes out clean then they’re ready! Once you’ve taken the cupcakes out of the oven, grab a toothpick and poke around 8 holes on the surface of each cupcake. For the Margarita “drink” brush the tops of the cupcakes with 2 teaspoons of tequila. For the Mudslide “drink” brush the tops with 2 teaspoons of coffee liqueur. For the Strawberry Daiquiri “drink” brush the tops with 2 teaspoons of rum.

To whip up the frosting for each of the cupcakes grab the 3 cans of white frosting and separate them into the same small bowl you use to mix the cake batter (please wash before making frosting). For the frosting on the Margarita “drink” add the remaining lime zest, lime juice and 2 teaspoons of tequila into the bowl and stir thoroughly. For the frosting on the Mudslide “drink” add the remaining teaspoons of cocoa powder and 2 teaspoons of coffee liqueur then stir until thoroughly combined. For the frosting on the Strawberry Daiquiri “drink” add the remaining tablespoons of strawberry jam and rum then stir thoroughly to combine. Top each flavor of frosting to the appropriate cupcake and watch the magic happen as you and your friends enjoy these “drinks”!
