Toasted Marshmallow Frosting

I love making cupcakes, but sometimes I don’t have time to wait around for them to cool. I found a great way to avoid the wait and honor National Toasted Marshmallow Day! My favorite cupcakes are red velvet, but you could do any type of cake for this to work.
Ingredients:

For the Cupcakes

1 box of Duncan Hines Signature Red Velvet Cake Mix

1 1/4 Cups Water

1/3 Cup Kelapo Coconut Oil

3 Large Eggs

For the Frosting

1 bag of jumbo marshmallows

Toasted Marshmallow Frosting

Directions:

  1. Mix the cake ingredients as described on the back of your cake mix only substituting Kelapo in for vegetable oil
  2. Fill the cupcake liners with your mix and place in the oven
  3. Set your baking timer for five minutes before your cupcakes are done and place a large marshmallow on top of each cupcake
  4. Take the cupcakes out when timer goes off or until a toothpick that’s inserted in comes out clean
