Turkey and Gouda Quesadilla

As the holidays come to a close, at least for a couple of weeks, we start to return to our daily routines. However, if you look in the fridge you will probably notice an abundance of leftovers, right?! At least I do and I know that I needed to do something with it before it went bad. My problem was the turkey! I said I would take some home but still had yet to use it and was in a crunch for creating a recipe with the turkey. I decided to make a quesadilla because it was quick, easy and would clear up some space in the fridge.

Ingredients:

Kelapo Coconut Oil Cooking Spray

1 large whole what tortilla

2oz turkey

3 slices of Gouda cheese

Dried cranberries or cranberry sauce; optional

Directions:

  1. Heat a skillet to a medium heat and spray coconut oil spray onto skillet.
  2. Add cheese and turkey to one side of the tortilla and using a spatula place the other side of the tortilla on top of the cheese and turkey.
  3. Allow the cheese to melt and the tortilla to become a golden brown by flipping on either side.
  4. Serve hot.

This recipe is so quick it would be perfect for a weeknight meal. If you enjoy cranberry sauce and still have some leftover from the holidays, place some in a small bowl and serve with your quesadilla for dipping. Or try adding dried cranberries into the tortilla when cooking. This will give you a very flavorful meal but you won’t be overeating as you probably did last Thursday!
