Valentine’s Chocolate Truffles
Happy Valentine's Day!
Happy Valentine’s Day! These truffles are easy to make and will really impress your chocolate-loving Valentine! Wrap them up in a pretty box for that extra special touch. Plus, nothing says “I love you” like heart-healthy ingredients like dark chocolate and extra virgin coconut oil!
Ingredients:
1 cup heavy cream
1/4 cup granulated sugar
1/4 cup Kelapo Coconut oil
1 lb dark chocolate chips or bars, chopped
1 Tbsp raspberry or hazelnut liqueur
¼ cup high quality cocoa powder
Directions:
Bring cream and sugar to a scald. Stir in coconut oil, chocolate and liqueur, in that order. Refrigerate 30 minutes, bring to room temperature. Whip if desired to create a lighter truffle filling or leave as is for a chewy version. Use a melon-baller or miniature ice cream scoop to scoop out into a 1-inch ball onto a cold cookie sheet.
Refrigerate for at least 1 hour, then roll each ball in cocoa powder. Other great coatings would be ground nuts or powdered sugar. Keep refrigerated or at room temperature.
